The main goal of any business dealing with food is the maintenance of freshness. This is important because foods of various kinds have to travel long distances and there is also the convenience of packaged products which are used by many around the world. One can tell how fresh a food is by the color, flavor, and aroma of it. If these three factors are not in place, a person will not buy the product because it is not appetizing. As a result, companies have to come up with solutions that will solve the various issues concerning preservation. One of these is oxidation. This occurs when a food is exposed to oxygen, and over a period of time, the color aroma, and flavor of the food changes. A good example of this is an apple that has been cut which turns brown changing the way it taste and looks.

This is one of the reasons why nitrogen is used in the packaging of food. It does not change the color, flavor or aroma of the food the way oxygen would. It also helps to minimize the bacterial growth that easily occurs in food. This is due to the fact that nitrogen is an inert gas and will not react with other chemicals in edible products.

Another issue with food and maintaining freshness is the natural oils contained in the products which can cause rancidity. This is also solved using nitrogen since it is inert and does not cause a reaction with other chemicals inside the food. This gas is used to blanket the product which prevents the oils from being oxidized. The oxygen levels found in the food have to be kept very low for this to take place.

The nitrogen used must also be of a quality that is compatible with food. There is an industry standard which suppliers have to comply with in order to be able to use this gas in the packaging of food. The purity level of the nitrogen is also important and depending on the food can range from 95% to 99.9% purity. An oxygen meter is used by companies to measure the minimum amount of oxygen in the package that can remain without spoilage to determine how pure the nitrogen should be.

When membrane technology is used to generate nitrogen, the purity level of it is usually less than 98%. This might be good enough for certain companies that manufacture certain types of foods, but it might not be good for others. In this case, another system is usually used if a higher percentage of purity is needed.

Advanced technology have allowed members of the food industry to create products that will not spoil after a short period of time. This is good for those in business because they will be able to serve millions of customers all over the country. However, it is also good for the customer since they will be able to have foods that are convenient to use.
